Our Tortellino, in chocolate
A tortellino leaves no room for error.
The sfoglia is rolled thin enough to see through, then cut, filled and folded around a finger.
That’s how we make ours every day, and it’s how Alessandro Luppolo works with chocolate.
He roasts and stone-grinds the beans himself in Elsternwick, after years as Head Pastry Chef at Michelin-starred Tosca and leading the pastry team at Attica.
We asked him to make our tortellino in chocolate. It comes with five pieces from his new collection, and it exists only at Trattoria Emilia.
The Tortellino
Piece 4 of 6 - The reason this box exists
Dark chocolate folded like the tortellino on our menu. Inside, a light white chocolate ganache and one whole Amarena cherry.
Alessandro made it for us and nobody else. It sits fourth in the box, right in the middle of the tasting order, after the fruit and before the nuts and coffee.
Two ways to have it
AT TRATTORIA EMILIA
End dinner with one piece, all six, or as many as you like.
The tortellino is the one you won't find anywhere else.

GETTING IT HOME
-
Keep it flat the whole way. If the box tilts, the chocolates move around inside and can get damaged. Keep it away from heat too, like a sunny car seat.
-
In the fridge. Take the box out 15 minutes before you eat, because cold chocolate hides the flavour.
