Trattoria Emilia’s tortellini in brodo’s recipe is a secret to us all.

Head chef Francesco is the only one to this day who knows the recipe.

It comes from his great-grandmother.

Our commitment to sustainability has only deepened with time, driving us to find new ways to continuously enhance our environmental impact.

Most of our products are locally sourced, just like the beautiful zucchini flowers from Ramarro Farm.

Years of travel and testing have led us to create a kitchen with the best products and virtually no waste, utilising more than 90% of our resources.
