Trattoria Emilia x Marco Dazzan x Alessandro Luppolo

Trattoria Emilia has spent ten years transporting people to Italy without leaving Melbourne, guided by head chefs and owners Francesco and Dino.

Marco specialises in authentic Italian fine dining and has built his career around Italian private dining in Melbourne.

Alessandro earned his Michelin star in Hong Kong, cooked at Attica, and now makes single-origin chocolate in Elsternwick.

This lunch is what happens when the four of them build a menu together.

Francesco

Francesco grew up in Modena and cooked in some of Italy's and Australia's finest kitchens before co-founding Trattoria Emilia in 2015. His approach to cuisine is instinctively creative. The way he reads a kitchen, an ingredient, a menu, is what gives Trattoria Emilia its character.

Head Chef & Owner - Trattoria Emilia
Dino the head chef and owner of Trattoria Emilia smiles outside the restaurant in a white chef shirt and dark apron with "Emilia" embroidered on the chest. A black brick wall and blurred doorway frame the portrait.

Dino

Dino grew up in Palermo and his pasta defies easy explanation. He takes a dish from a completely different tradition, rebuilds it as a pasta, and makes it feel like it could never have been anything else. That instinct is central to what Trattoria Emilia's kitchen is.

Head Chef & Owner - Trattoria Emilia

Marco's cooking is grounded in a deep knowledge of Italian fine dining. What he brings to the table is not just technique but an understanding of why Italian food works the way it does.

Personal Chef

Marco Dazzan

Alessandro makes chocolate the way a chef thinks, not a confectioner. He brought a Michelin-starred pastry background and time at Attica to a small shop in Elsternwick, and built something that sits in a completely different category.
